The third episode of the serie focuses on Francis Mallman, an Argentine chef, who specialies on Patagonian cooking techniques. Though he owns several restaurants and employs hundred of people, he's mostly focusing on training his apprentices to his techniques and running his catering service. It's really impressive to watch a nomad chef who can cook absolutely everywhere.
What Mallman loves most about food is the way the whole picture makes him feel : happy to share this meal with people. Happy to cook the vegetables, the meat, prepare the table and enjoy "the theater of it". It really makes you appreciate the small things and "the theater of it" in your own life.
Really loved his philosophy about taking risks and step aside the common path to trace your own by being passionate and hard-working.
